Hubert Young Biography and Philosophy

Hi, I’m Hubert Young, a Philippine-based restaurateur. In case you haven’t noticed, I love food. I love everything about it, from picking out ingredients, to preparing it, to presenting it. There’s something about the way different flavors combine to create a masterpiece in one’s mouth that appeals to me, and I’ve spent most of my life completely dedicated to that passion. Through a little luck and a lot of hard work, I was able to pioneer some of the most distinctive dining destinations in the country offering dishes that make global cuisine accessible to the Filipino palate.
I fused the inherent Japanese practice and the familiarity of local hospitality to establish a unique Filipino twist in all four of my dining establishments – UCC Coffee Concept Stores, Sakae Sushi, Crepes and Cream, and Cafe City 1888.
The success of these endeavors is largely attributed to the fact that I’m extremely passionate about what I do. I think being passionate for your work plays a big part in how successful and fulfilled you’ll be in life. Sometimes, I wonder what would’ve happened if I ended up taking over the family business. When I was young, I had the choice of working for my dad after I got my degree. It would’ve been easier for me, since I wouldn’t have had to go through what every other college graduate feared: job hunting.
But I had other plans though. I went my own way and pursued a career in the food industry, and while the road to success hasn’t always been smooth, I’ve never regretted my decision.
Since then, I’ve established an array of unique dining brands for people who are looking for deliciously different dishes and drinks.
Some of these dining establishments and cafes include:
The UCC Coffee Concept Stores (Vienna Café, Café Terrace, and Park Café), brews the world-famous UCC coffee using the famous siphon coffee-making process. This guarantees the freshness of the coffee’s signature flavor and aroma.

The Singaporean-based chain Crepes and Cream introduces its selection of sweet and savory options to be enjoyed with a Filipino twist. Part of its menu features local delights like Chicken Adobo and Halo-Halo; and the Create-Your-Own-Crepe concept, where diners can mix and match the ingredients.

Sakae Sushi introduces the Japanese popular dining concept called Kaiten – a conveyor belt concept, where diners choose from an endless parade of Japanese delights fresh off the automated sushi-making process.

And finally, Café City 1888, offers a cozy café experience and a unique fusion of menu favorites that define an accessible yet upscale culinary indulgence for Filipinos.
